Wish Wine Co.
Seattle native & Certified Sommelier Dave Bender founded Wish Wine Co in 2010 with the initial goal of producing a limited release of small production Pinot Noir for the U.S. holiday season. Following the success of that first launch, Dave now offers a Cabernet Sauvignon, Zinfandel, Red Blend, Sauvignon Blanc and Chardonnay, year round.  

The primary vineyard source for the Wish Wine Co. is a 600-acre estate vineyard in Mendocino County, within the North Coast American Viticulture Area (AVA) of California. The North Coast is comprised of the counties north of San Francisco including Lake, Marin, Mendocino, Napa, Sonoma and Solano and is also home to over 40 sub-AVA’s. Since the mid-19th century the North Coast has been the epicenter for high quality wine production ranging from small boutique wineries to cult classics. Both soil composition and the temperate climate have helped to contribute to the success of this wine region. Additionally, some of the nation’s most talented vineyard managers and winemakers now live there, further building on this region’s great reputation.

Wish Wine Co. Chardonnay
This North Coast Chardonnay offers rich ripe apple fruits yet not the overcooked exposure.  Such dynamics allow for nice acidity and minerality.  Wish Wine Co. Chardonnay was crafted to please both the rich Chardonnay lover as well as the Burgudian lover.

Alcohol: 13.5%
Flavors: Aromatics of fresh floral tones of apple and pear blossoms; wet rock minerality tied together with toast oak.
Characteristics: Ripe fruit but not over cooked with medium acidity.  Toastedoak notes are medium on the palate.

Wish Wine Co. Zinfandel
This Zinfandel maintains an elegance that is hard to find in California.  
Appellation: Mendocino, CA
Grapes: estate grown
Alcohol: 14.5%
Flavors: red plum, blackberry and blueberry flavors make up the dense core of
this wine, which is uplifted by refreshing acidity
Characteristics: There is a dried grape skin component in this wine that contributes to its fine structural tannins. The finish of this Zinfandel reveals a soft juicy texture, intricate details and moderate length.

Wish Wine Co. Red Blend
Due to the cooler climate of Mendocino, California, this was is able to achieve ripeness, while maintaining fresh acidity. It reflects the Northern California climate by showcasing polished fruit character. Due to the blending process the fruit is well integrated and balanced with its structural components--a strong indication that this wine is ready to drink.

Grapes: 26% Cabernet Sauvignon - 24% Merlot - 33% Zinfandel - 17% Syrah
Alcohol: 13.5%
Flavors: boysenberry, Asian plum and red currant
Characteristics: ripe, fresh acidity, well-integrated fruit, balanced with structural components

Wish Wine Co. Cabernet Sauvignon
Stuctured yet pleasurable for even the most sophisticated wine palates, Wish Wine Co North Coast Cabernet Sauvignon offers complexity in cool weather climates.

Black and red currants, black cherry fruit with savory charactersitcs including tobacco, cedar, mint and espresso.

Weingut Castelfeder -- Alto Adige

From the photo, you might think this wine region is in southern Germany or maybe Austria, but it's actually northern-most Italy in the area formerly known as Südtirol (a part of Austria until WWI), now known as Alto Adige. Bi-lingual and bi-cultural, it's Italy with a strong Austrian influence. On her first visit to Seattle, Ines Giovanett (daughter of Günther Giovanett, owner of the Castelfeder Winery) laughingly said: "I wear a dirndl! I eat knödel!" More on Ines & her family's winery>
